Chia Seed Pudding 3 Ways

Base Ingredients:

1/2 cup chia seeds

2 cups nondairy milk (I recommend unsweetened cashew milk)

Chocolate Flavoring:

2 tablespoons baking cocoa

2 tablespoons maple syrup (can be substituted with 1-1/2 tablespoons agave nectar)

Matcha Flavoring:

1-1/2 teaspoon matcha powder

2 tablespoons maple syrup (can be substituted with 1-1/2 tablespoons agave nectar)

Vanilla Flavoring:

1 teaspoon vanilla extract

1 teaspoon stevia

 

Directions:

  1. Mix chia seeds and nondairy milk.
  2.    For chocolate or matcha: mix powder and syrup together in a separate bowl until a paste is formed and then incorporate it with the chia seed mixture.                         For vanilla: incorporate vanilla extract and stevia into chia seed mixture.
  3. Cover and chill in the fridge overnight (or for at least 4 hours) to let gel.

TIP: Some great toppings are dried fruit, coconut shavings, and chopped nuts.
